My uncle is the pastry guy in our family. He uses a pastry cloth actually similar to this one http://www.oklahomapastrycloth.com/demo/ I'm sure you can find an organic cotton if you'd prefer. He's used is for as long as I can remember. His always just looked like flour sack cotton to me.
