Best way to deal with ILs when you have GD

I love my ILs. They are incredibly kind and accommodating. DH and I are here for a week over the holidays and to prepare, my MIL asked DH what kinds if things I need to eat, avoid and such since I have GD. The problem is that she spoke with DH who, while he means well is a bit lost despite me telling him several times what things I need to eat and what things I need to avoid.
When we got here Friday night I noticed my MIL stocked up in stuff, but not the right stuff. I've been trying to adapt things to suit my GD diet, but my sugars are still really high she doesn't understand that fruit isn't so good and that while the bread she bought says wheat, it doesn't actually have fiber.
I feel bad because she'll make a "healthy" breakfast, but I know it will shoot my numbers through the roof and the snacks in the house are more carbheavy things like granola bars and such. I don't want to be "that" DIL since she tried, but woul I be amiss if I went out and bought groceries for myself for the week?
DH's family is all thin and very active so they've never seen the need to adjust their eating habits, but I don't want to be a pain in the butt. I already feel bad that I make a second breakfast for myself...
Advice?

It was very sweet of her to try and accomodate your needs! My ILs are the same way (I have Celiac and GD). Nothing is more touching than when they take the time to make me my own dish! But unfortunately the things she bought aren't what you need. So, I'd just very politely explain while these things are sooooo very appreciated and are relatively healthy, they're not GD healthy. Hopefully, since they're seem so nice, they'll understand and want to do what's best for you and the future generation you're carrying!

I guess I'm a little lucky: My FIL is type one, so he gets a lot of this stuff.

I think that this might call for a little "GD deprecation" as in: "oh man, I'd really love to eat that, but this GD diet is sooo messed up that I can't. Isn't is dumb that I can have XX but I can't eat YY?" Then I'd apologize and go get my own food.

Thanks ladies! Yes, my ILs are great and I really appreciated it... I just felt in a prickly spot because I didn't want to hurt feelings since they tried. Thanks!
