The phrase "life is too short to use cheap yarn" is one I live by. But if it's for baby, look for something washable :

Generally, yes. The yarn will have a recommended hook size on the label. However, if you want it a little thicker or thinner, you can play around with the hook size.

Also, I don't usually use synthetics for babies, because in a fire (God forbid), they can burn the skin severely, because they melt like plastic. Graphic, I know--sorry. Someone once told me this and I haven't been able to use synthetics for baby gifts since.

Yes
I like cotton and cotton and wool blends. It's more expensive but the quality difference between that and synthetic is night and day.

(I'm a knitter.)

Love PP's comment that life is too short for cheap yarn.  For me, I just want my baby to have really nice fabrics all around them.  Yes, I'm sure they'll have some acrylic in their lives, but why on their baby blanket.

Go for cotton/wool blends (a little acrylic is okay) or a superwash merino which is really wonderfully soft.  If you can find a local yarn store (as opposed to JoAnn Fabrics or something), they can definitely direct you.

The yarn snob in me is knitting a blanket out of superwash merino Malabrigo ,which is a gorgeous kettle-dyed yarn. But also, there are some wonderful yarns like Cascade 220 superwash which is reasonable and knits up really nicely.

Yes! You don't want to use cheap or rough yarn, I believe it's a 1 or 2? I use Lion Brand baby yarn, and they come in so many pretty colors and they are very very soft... but also trickier to work with because they are so delicate and require a smaller hook.
