Remember my metric issue?

Well, MIL gave us their kitchen scale. Which saved my butt. I made the japanese cheesecake. It didn't turn out perfectly. It didn't brown right on top, it had a bunch of cracks, and then I went to go slice it and it's very crumbly. However, it does taste correctly and is super yummy. So I'm taking it still. Who cares if it doesn't look super pretty. It's yummy.

I'm thinking of trying a different recipe next time. Maybe one with more things to "stabilize" it. Since I used one that was pretty low on the eggs and flour. However, the beauty of asian sweets. They are nice, light, airy, and not sweet really. Very pleasant.

I never use flour in my cheesecake, but lots of eggs.

Yes, it was in a water bath. Also, this isn't a normal cheesecake. It's more like a really fluffy cheesecake flavored pound cake type thing.

Ah okay. My friend who does the Bravetart site lived in Japan twice, she's an amazing pastry chef and said how different the desserts are.
