I need stink help

My pockets are starting to get a bit stinky. They aren't repelling, just a stink.

I've tried more detergent, less detergent, multiple extra rinses, etc. None of that made a big difference.

What's my next step? Do I need to strip or is there something I can try before that?

ETA: My current wash routine is cold rinse, hot wash/cold rinse with detergent (Original Tide powder about to the '1' line), sometimes and extra cold rinse. This is in an HE front loader, on 'Heavy Soil' and I add a wet towel to get more water in there.

It's kind of a weak ammonia smell

I thought liquid detergent was a no-no with cloth?

Yeah, in general liquid is a no-no for cloth.  Ammonia stink means you're not getting all the soad out.  Maybe try stripping by doing two or three hot rinses with no soap. Then dry and see if they still stink.

Yes, liquid is a no-no for cloth.

If it's ammonia it is likely you are using too much Tide and having build-up issues. You only need (up to) 2 Tbsp of Tide in a HE FL and I think the first line is 3 Tbsp. I would do a hot water strip and then start using less detergent. I would also switch your initial cold rinse to a cold quick wash.  The extra agitation really helps.

for me the best way to remove all kind of smell is boil the diapers for 20mn then wash them normal,i also  put a 1/2 of a lemon on the machine,i do this for three reason,lemon helps to remove all the oil that can be on the diapers,is a natural bleach and turn the water a little soft.

If you have synthetic fabrics, you will not be able to boil your diapers. I had a similar issue and narrowed my issue down to the type of detergent I was using Rockin Green. My stash consists of prefolds, pockets and AIOs. Here is what I did:

Prefolds and hemp inserts:

I did full hit washed until no more soap bubbles appeared in the water. Then I did a final Warm/warm quick wash and added a 1/4 cup vinegar right into machine.

Synthetics:

Hot washe with 1 tsp. blue Dawn. Hot washes until no more bubbles appear.

I also switched to Country Save and this has also helped.

This. Except the first line is 4 tbsp. I was having the same issues after switching to Tide to get rid of barnyard stink from a natural detergent. I probably did 6+ extra rinses yesterday before the bubbles stopped. Pretty sure that'll solve DD's recent rash, too.

 It's the inserts that stink, they are MF.

I think I'll try the multiple hot rinses and washing with a little less detergent and see what happens.

You can not boil anything with elastic, snaps, or PUL.

I have FB pockets and we use method liquid soap.  I've been using it for a year and never had a problem with repelling.  I put just a dab of soap and sometimes do an extra long wash or two extra rinses.  I find that smells tend to go away when I hang dry outside instead of using the dryer.  They always seem fresher this way.

My HE routine is this:

quick wash - heavy soil, extra rinse (I add a pitched of water to this as well)

1/2 squirt of soap & heavy duty wash OR sanitary wash, both with an extra rinse and a pitcher of water added to the wash and rinse cycles

every two weeks or so I do an extra rinse cycle at the end
