Ideas please?

I was just wondering if I could get some recipes and things for lunches and dinners that don't cost much to make and don't take much time. My husband LOVES to cook (thank God), but we're both in college and both on a budget. We've got spaghetti, Shephard's pie, tacos, and macaroni down pat. Anything with a little more flare would be nice.

All I ask is that they not have peppers (I'm allergic) or too many tomatoes (also allergic). Thanks!

Lemon and Herb-Butter Roasted Chicken is a cheap dinner entree that will also give you leftovers for another meal.  A whole chicken is usually only $4 or $5

Lemon and Herb-Butter Roasted Chicken

1 whole chicken

2 fresh rosemary sprigs

2 fresh thyme sprigs

1/2 stick unsalted butter at room temperature

juice of 1 lemon and zest of 1/2 of it

2 garlic cloves, smashed

Directions 

Preheat oven to 375.  Place chicken in a roasting pan (you can buy the disposable kind at the grocery store) with the breast-side up and take out the gizards.  Make a small incision under the skin at the neck and insert your knife to give you some wiggle room.

Combine butter, herbs, garlic, zest and lemon juice in a food processor or bowl.  Mix well.  Rub mixture under skin of chicken as well as on top.  Bake 15 minutes for each pound plus 15 minutes (ex. a 4 pound chicken would cook for an hour and 15 minutes).  Chicken is thoroughly cooked when juices run clear.

I would suggest going through blogs! They are full of recipes and usually organized by categories. I have a quick and easy tag in my blog that might be helpful. I don't really cook expensive foods so most things are relatively cheap.

Also, allrecipes.com, kraft.com, eatingwell.com, bettycrocker.com have budget sections.  Also, I know there are some blogs that you can just google that are dedicated to budget friendly meals.

I like to poach or roast a couple of chicken breasts and divide it tup for chicken salad sandwiches, chicken spinach salads & chicken pasta salads - those are all pretty cheap meals.

Chili makes a large batch and beef is usually on sale, and beans are cheap (or make it vegetarian)

Panini's are also pretty budget friendly and I serve them with a salad or soup to make a meal.

If you like bbq, get a pork shoulder (about $5 for 4 pounds, bone in) and throw it in the slow cooker for 4 hours on high (or 8 hours on medium) with some bbq sauce and onion. It's delicious and cheap and will feed you several meals. We put ours on buns with a slice of cheese
