I actually like all of your names. I don't mind that they sound like nicknames. To me, name your kid what you want. If you don't like the long version, just stick with the nickname. I know a guy named Tony - not Anthony, just Tony. So what?
Something about Josy looks unfinished. Maybe Josey? I do prefer it with the -ie ending though. Josy makes me want to pronounce it Jahs-ee instead of Joe-sie.
I don't think Ruby is too close to Lucy, but it's not my favorite from your list.
My favorites are probably Wendy, Penny and Avery. I don't mind Penny as a stand-alone name instead of Penelope.
