Seeking lunch ideas

Hoping some of you can help with with healthy lunch ideas.  My food aversions have made my usual stuff totally non-negotiable and I'm running out of ideas.

Here's the tricky part:  I often leave early in the morning and whatever I bring has to remain in the car.  I have no access to a fridge or microwave, so if it needs to be refrigerated, I just keep it in a cooler bag and have to eat it as is.  

Any thoughts?  I'm usually good at creative healthy foods but I'm coming up empty!

My fav for awhile has been wraps. I get whole wheat wraps, hummus, cheese, roasted red bell peppers, spinach, cucumbers etc...I'm not eating much lunch meat so I just fill it with veges. I think it would hold up fine without a fridge too?

Can you out a cooler with ice in your car? I did that back in highschool for the days I had cheerleading and then dance right after and had no chance to get food and also had no fridge or microwave. I'd put roasted chicken and veggies in Tupperware in the cooler and it stayed better than just in a lunch box with an ice pack. Peanut butter sandwiches and fresh fruit should be ok in the car. Also healthy bars like Lara bars, homemade granola bars, dry cereal? It's hard to think of things that don't need a refridgerator and are still safe to eat!

That's pretty much exactly what I've been doing (except the chicken - food aversions just won't allow it).  PB on sprouted grain English Muffins for breakfast, Luna bars, whole grain wraps with hummus (thanks tuffytiff!) for lunch.  It is  really hard to think of pg-friendly food that doesn't need reheating isn't it?

I was thinking something similar ~ Pitas with hummus and veggies. I also like a good egg salad sandwich if you feel it could stay cold enough in a lunch cooler. You could even sub the mayo for avocado for added nutrition. 

You could also try pasta salad, which is great cool.

Ummm, I can't resist sending you more...I love talking about food! All of these recipes mention eating hot but I think they could be great served cool from an ice chest. 

I thought this one might work...except instead of using white wine to make the sauce, you could just add a little red wine vinegar. I also would just make the sauce separate and then add to the meal when you're ready to eat. And I would also add romaine to make it a salad.
