Have you tried drinking juice between snacks? That keeps me full just a little longer. Don't forget to drink water, though..
I've been getting hungry within about an hour of eating no matter what I just ate. I could have a full meal, and I'm hungry. I could have just some carrots or something, and I'm hungry. In my head, it's my body encouraging me to eat and drink more than I am.
You could also try food with more fiber, like broccoli, whole grains, or legumes (beans and nuts). I agree with you that potato chips are probably not the answer. Trial and error has helped me find which healthy foods are most filling.
