NTTGP Related: Gluten Free Christmas Baking

I just started eating gluten free and I have family that are gluten intolerant, I'm looking for some recipes or blogs so I can continue my Christmas baking traditions... I've been using the Gluten Free Goddess.  Does anyone have any suggestions or any tried and true recipes?  Thanks!

If you have traditional recipes you love from the past, you can usually find ways to make them gluten free (substituting all purpose flour with gluten free flour and such). It can take some experimenting but I've "deglutened" a lot of regular recipes handed down. :)

I love the crockpot 365 blog, and all her recipes are gluten free. There are quite a few baking or dessert recipes for the crockpot.

What were you thinking of making?

I'm GF/DF/EF/PF and so far have successfully made peanut-free & DF buckeye balls (peanut butter balls dipped in chocolate).  I've made them every year since I was little, and they came out delicious using almond butter and DF alternatives!  For thanksgiving, I made a pumpkin pie that was phenomenal, my whole family wanted seconds and they're not pumpkin pie people.  I was going to try spritz either tonight or tomorrow night... using GF flour instead, most likely sweet brown rice flour since it's a plain cookie. I usually use Bob's Red Mill AP GF flour, but it can have a strong bean flavor, so it depends on what you're making to determine which flour might be the best.

I want to make some cookies and I was thinking a pumpkin pie or some other kind of pie.  I'd like make sugar cookies or gingerbread cookies.  My first try at GF baking was chocolate chip cookies but they seemed a little grainy from the flour I used, other than that they were tasty.  I'm going to buy some of the Red Mill flour to make my next batch.

I use this recipe for sugar cookies (I add some orange zest because my mom adds that to her regular sugar cookies) and love how they come out. http://www.bettycrocker.com/recipes/sugar-cookies-gluten-free/f607fd69-55c5-48ef-98ab-207082fbb376

I've made a few of the recipes from Betty Crocker and haven't been disappointed! Their chocolate chip cookie mix can be grainy though.

Gluten Free Girl's guidelines for making your own GF flour blend is fantastic. Make your own blend with flours / starches you like, and then use that for all baking. It is really easy to sub out regular flour with GF flour in baked goods - for every 1 cup of "normal" flour, use 140 gms of your GF flour. It works SO well for cookies, muffins, brownies, etc. Scales are better for GF baking because not all the flours weigh the same.

I have a recipe for sugar cookies that you can roll out just like regular ones - if you want that, PM me!
