Roasting veggies is super easy and yummy. Carrots, parsnips, squash, mushrooms, etc. coat with olive oil, add salt and pepper to taste and roast in the oven for 45 min or until soft at 375. You can even put chicken breasts or thighs in the pan too [salt, pepper, olive oil] and its an all in one dinner.
Or if you like Brussel sprouts, cut into quarters and saut with olive oil, salt and pepper until soft. Easy and tasty.
