Talk to me about cheesecake...

I need to make a dessert for New Years and I'm thinking about cheesecake. I love to bake but have never attempted it.  Thoughts, advice, recipes? TIA!

Sounds like a great plan (and tasty too!).  I feel like the Philadelphia cream cheese container (the bar) has a recipe, but I have never tried it, so no help there.  I think you're supposed to use a springform pan though.  Good luck!!

Definitely use a spring form pan, and DO NOT BEAT IT TOO MUCH!!! I used a hand mixer on mine last year and it made it WAY too airy and fluffy and then when I baked it it rose way too high over the spring form pan and it was a disaster. You have to really be careful with air.

I make cheeecakes on the side for extra cash, this is what i do:

1 USE WHIPPED CREAM CHEESE!!!!

here is the recipe:

preheat oven to 325degrees F, place a pan of water in the oven on the bottom shelf, cheesecake will go on the upper shelf

1.5 cups of graham cracker crumbs

1 stick butter

(i do this because i sell mine) take the bottom of the spring form pan and trace it on to a piece of parchment paper and cut out to place in the bottom of the pan.

melt butter in microwave, add the crumbs and mix until all are moist, then dump in the pan, spread with spatula until the bottom is covered then press down with hand. Take Foil and wrap the outside of the pan, only to the top, do not let it go into the inside of the pan.

bake for 10minutes

while that is baking, in a bowl:

dump 32oz of whipped cream cheese

4 large eggs

1 cup sugar

1tsp Vanilla extract and lemon juice

use hand blender until it all mixes well and the lumps are out of it, about 2-3 min on high, once it starts mixing. when done mixing bang bowl on the counter and you will see all the air come out of it.

pour into the pan, place back in the oven, cook for 1 hour 10 minutes. after that, turn oven off and let it sit in the hot oven for 1/2 hour, then take out and let it sit on top of the stove until room temp (2-3 hrs) and then place in the fridge uncovered until the bottom is cold. when taking out of the pan, take a straight blade knife and run in on the outside of cheesecake (between the cheesecake and pan) to loosen the cheesecake from the form. and then remove from the form and serve.
