Freezing Meals

Hey Ladies,

        So I'm planning on making a bunch of meals and freezing them so we have something to eat after baby arrives, (we don't have anyone coming to help us) but I'm just wondering what meals you're planning on making and freezing because I wonder if some things like making chicken, mashed potatoes, veggies and gravy would be gross heating up after being in the freezer.

Last time I made things like spaghetti sauce, chicken pot pie (just the filling), stuffed shells, stuffed peppers, and soups.  I think I googled frozen meals for some ideas also.  I haven't been as ambitious this time.. but I wish I was. :)

We got a small deep freeze for ourselves for Christmas, and I've been trying to fill it up! you should check out my Freezer foods board on pinterest, I've collected a lot of stuff there, mostly "dump it in the crock pot meals" and its a little less starchy than some of the stuff I see out there since we're a low carb family now.

I hugely recommend the sausage muffins.  They warm up in about two minutes in the microwave, and DH can't get enough of them!

My mother has reheated gravy and mashed potatoes and such for years, and its still very good. I was thinking about freezer meals, too, and she recommended casseroles. They are easy to make and easy to reheat.
A tip on freezer meals: write the temperature and bake time and any other instructions on the wrapping. That way you don't have to look up each one as you pull it out and also helps if its your hubby doing the reheating.

Some of my favorites to freeze that are easy to reheat are Lasagne, Chili, Veggy Soup, and Spinach Rice casserole.

Here's the list of things I have in my freezer, in addition to frozen veggies from the store, a few store bought pizzas, and half a pig. I got several of the recipes from another bumpie who posted a while back about freezer meals.

waffles, wild rice and chicken, chicken tacos, black bean taco soup, hearty beef stew, cilantro lime chicken with black beans and corn, potato soup, blueberry muffins, tomato basil soup, no bake cookies, spaghetti sauce, chicken cacciatore, chicken broccoli alfredo, crock pot cannellini bean stew, stuffed shells, lasagna, quiche, crock pot minestrone soup cranberry orange muffins, goulash, quesadilla casserole, black bean taco soup, pancakes, layered enchilada casserole, and cheddar scallion bread

I'm planning on making two types of meatballs while DD is napping today. I wanted to do chicken pot pie and chicken enchiladas, but I don't think I'm going to have the time, or more importantly, the energy.

We have the following in our freezer ready to go:

-pasta sauce (8 dinners for 2)

-chicken Alfredo (4 dinners for 2)

-lasagna (3 dinners for 2) 

-turkey soup (7 dinners for 2)

-chili (1 dinner for 2)

-cannelloni (1 dinner for 2)

-pulled pork (2 dinners for 2)

-shepherds pie (2 dinners for 2)

-20 banana chocolate chip muffins

 We have been prepping for a few weeks and my mom and sisters had a day last week where they each made something for our freezer.  It's great to know we have some good meals on the ready (especially since I don't cook)

 Good luck with your prep work.  Pick things you like to eat and are healthy and go with it.

I bought a huge pile of frozen pizzas for very desperate times (and my hubs loves them), as well as chicken nuggets, frozen tortellini and meatballs.

I made chicken enchiladas, soups, pizza sauce, alfredo sauce, and a couple different casseroles.

This week, I'm going to take a bunch of chicken breasts and throw them with some veggies in freezer bags for crockpot meals.

I would look on pinterest for freezer meals - especially ones you can prep and throw in a gallon bag, then later put in your crock pot. I'm a HUGE fan of crockpot cooking.

Soups are good to freeze in individual portions, I've done a quick chicken parm and frozen that, pizza casserole (on my pinterest page in the "domestic in the kitchen" board that was delicious if you want to take a look - link is in my siggy.

Right now I am doing a lot of Crockpot meals because they should hold up longer since the ingredients aren't cooked beforehand.  Closer to my due date I will probably do some casseroles.  So far I have:  Chili (this one is cooked), pork and green chili stew, spaghetti sauce, cilantro lime chicken, Teriyaki chicken, Mongolian beef, honey-garlic chicken, BBQ spareribs, and a few others.  I am planning on putting away about three meals a week between now and baby.  I am going to add lasagna, stuffed shells, enchiladas/enchilada casserole, tuna noodle casserole, and some other precooked items to the stash.

Just plug "freezer meals" into Google and you will find tons of ideas! Plus, you can do some research on which ingredients freeze well and which ones don't.

I found that cooking up a bunch of ground beef and shredded chicken was a huge help because I could throw together a meal pretty quickly if part of the prep work was already done.  I also like to have easy breakfast items such as pancakes, waffles, quick breads, etc in the freezer.

Do ya'll know how long the meals stay good for in the freezer? I assume a long while but if I'm almost 37wks now does it make sense for me to do a major cooking/freezing day or wait till I'm closer?

I am doing the same thing. I made pancakes this morning for the freezer. I am making burritos, too. You can also do lasagna and lots of other food. Type in freezer meals on pinterest and you will have so many ideas.
